Ingredients

175g/6oz potatoes, scrubbed and halved.
salt
butter, to taste
chopped fresh mint or parsley, to ganish

Method

1. Bring a medium pan of salted water to the boil and add the potatoes. Cover with a lid and simmer gently for 15-20 minutes or until tender.

2. Drain and toss in the butter with chopped fresh mint or chives to serve.
