Cobb Salad

Love the look of this generous Cobb salad from London superfood eatery Avobar, snapped by Insta flexitarian delishkass. If you didn't already know what a Cobb salad included, you get greens, tomatoes, hard-boiled eggs, avocado, bacon and corn as well as, in this rendition, king prawns. Delish indeed!

Japanese chicken and prawn noodle broth

We just can't get enough of that Japanese flavour and this protein-rich broth snapped by Blackpool's Health Lounge is giving us serious food envy. It just goes to show, healthy food doesn't have to be boring, plus, if done right, it can certainly be just as filling as a cheat meal.

Asparagus salad

Jennifer Fields AKA girl.on.the.range is a professional chef from San Francisco but this light Spring meal is so simple, we're sure anyone would be able to throw it together. It's totally vegan with a millet base, asparagus tips, fresh basil, lemon and garlic. Just a perfect way to get back on the wagon this month.

Carrot cauliflower gnocchi

Nashville influencer Steph AKA Finding Fullness gets creative with this ensemble. The gnocchi is made from pureed carrot and caulflower with almond flour, cassava flour, nutritional yeast, garlic, salt and pepper. Served with vegan kale pesto, vegan goat's cheese and asaparagus, it's a superfood bonanza.
