Easy Chocolate Dessert Recipes

How would you feel if you heard the words chocolate fondant and chocolate truffles? Is your mouth watering yet? Well if they sound right up your street then here are the recipes to make your own!

Easy Chocolate Fondant

Ingredients

100g dark chocolate

10g cocoa

100g butter

2 eggs

70g caster sugar

50g flour

½ tsp of baking powder

1 tub of Kelly’s of Cornwall Cornish Dairy Vanilla Ice Cream

Method

Lightly butter six ramekins and preheat the oven to 210ºC.

Melt the chocolate in a bain-marie and add the butter. Remove from the heat and mix well together.

Whisk together the eggs and sugar until the mixture is pale, creamy and fluffy and fold into the chocolate. Add the flour, cocoa and baking powder and continue to fold until nice and even.

Divide the mixture between the six ramekins and chill for around an hour.

Cook in a hot oven for 6-8 minutes. The tops should resemble biscuit and just be beginning to crack.

Serve warm with fresh strawberries and Kelly’s of Cornwall Cornish Dairy Vanilla Ice Cream.

Rodda's Clotted Cream Truffles

Ingredients

Makes about 25

1 227g tub Rodda’s clotted cream

200g 70% cocoa solids chocolate

50g good quality cocoa powder

Method

Melt the chocolate either in a bain marie or in the microwave.

Stir the clotted cream into the chocolate until the mixture is silky smooth. Chill for 2-3 hours.

Have a plate ready with the cocoa powder. Then use a melon baller dipped in hot water to shape the truffles by running it through the truffle mix. Drop into the cocoa. You will need to dip the melon baller into the hot water after each truffle. Alternatively you can use 2 teaspoons.

After you have done 5 or 6 truffles, roll them in the cocoa and then set aside and continue rolling and dusting until you have finished all the mixture. If you want a more uniform finish dust the truffles, roll in your hand to form a smooth ball and then dust again in the cocoa.

Chill overnight if you can or for at least 4 hours.

For a contemporary twist, try flavouring your truffles with a 1/4tsp minced chilli, the zest of an unwaxed lemon or 1/2tsp Cornish sea salt.
