Healthy Recipes: McCain Baked Jacket Potatoes

Not only can eating healthy be difficult but it can also be time consuming. McCain have killed two birds with one stone and have created a number of recipes with their ready baked jacket potato – healthy and quick!

Greek Salad McCain Ready Baked Jackets – 388 calories

Serves: 2

Preparation & cooking time: 7 minutes

Cost per serving: £1.85

Ingredients:

•             2 McCain Ready Baked Jackets

•             200g fire roasted peppers from a jar, drained and cut into slices

•             3 tbsp fresh tomato salsa

•             2 tbsp pitted black olives, chopped

•             100g feta cheese, crumbled

•             Salt & pepper to season

•             Handful of chopped parsley to garnish

Method:

Cook two McCain Ready Baked Jackets in the microwave as per instructions on pack

Heat the salsa in a small pan, add the slices of pepper and the black olives and season well with salt and pepper

Once the potatoes are cooked, split open and top with the sauce, crumble the cheese over the top and serve sprinkled with fresh parsley

Top Tip:

Try this topping served cold – simply delicious!

Radish & Watercress Salad & A Light Yoghurt Dressed McCain Ready Baked Jackets – 295 calories

Serves: 2

Preparation & cooking time: 6 minutes

Cost per serving: £1.23

Ingredients:

•             2 McCain Ready Baked Jackets

•             100g fresh radish, either cut into chunks, or thinly sliced

•             1/2 bag watercress, rocket and spinach salad

•             100g low fat greek yogurt

•             1 lemon, zested and juiced

•             1 clove garlic, crushed

•             1 tbsp olive oil

Method:

Cook two McCain Ready Baked Jackets in the microwave as per instructions on pack

First, make the dressing by mixing together the yoghurt, lemon, garlic and oil. Season well and allow to stand whilst the potatoes are cooking

Once the potatoes are cooked, open them slightly and top with the fresh radish and salad and then drizzle on the dressing

Steamed Mackerel, Spring Onion & Crème Fraiche McCain Ready Baked Jackets – 488 calories

Serves: 2

Preparation & cooking time: 7 minutes

Cost per serving: £1.83

Ingredients:

•             2 McCain Ready Baked Jackets

•             110g tin of steamed mackerel fillets

•             3 spring onions, sliced

•             100g half fat crème fraiche

•             1 tsp lemon juice

•             1tbsp olive oil

•             1 tsp garlic puree

•             1 tbsp freshly chopped dill

•             1 wedge of lemon to serve

•             Salt & pepper to season

Method:

Cook two McCain Ready Baked Jackets in the microwave as per instructions on pack

Open the tin of mackerel and break up into pieces into a bowl along with the juices from the tin. Add the chopped spring onions and mix well

To make the dressing mix the crème fraiche, lemon juice, oil, garlic and dill in a bowl and season with salt and pepper to taste

Combine both the mackerel mixture and the dressing and mix well

Once the potatoes are cooked, open them slightly and top with the mackerel and dressing mixture and serve with a side salad and a squeeze of lemon

White Bean, Rocket & Parmesan McCain Ready Baked Jackets - 491

Serves: 2

Preparation & cooking time: 7 minutes

Cost per serving: £1.30

Ingredients:

•             2 McCain Ready Baked Jackets

•             410g tin cannellini beans, drained and rinsed (drained weight, 235g)

•             Handful of fresh wild rocket

•             Handful of fresh parmesan shavings

•             3 tbsp good olive oil

•             1 tbsp red wine vinegar

•             1 tsp Dijon mustard

•             1/2 clove garlic, crushed

•             Salt & pepper to season

Method:

Cook two McCain Ready Baked Jackets in the microwave as per instructions on pack

To make the French dressing, place the olive oil, red wine vinegar, mustard and garlic clove into an empty clean screw top jar, replace the lid and shake well. Season to taste with salt and pepper and shake again

In a large bowl, mix the beans and rocket and drizzle with the dressing

Once the potatoes are cooked, open them slightly and top with the bean mixture and garnish with parmesan

Top Tip:

Add some finely sliced Parma ham if you are feeling extra hungry
