Kingsmill Christmas Rolls Recipes

The festive season is a busy one, and with all the family coming together it can often be difficult to keep them all fed and watered!

This roll recipes are great for quick but delicious lunches and can also be used as a way to make Christmas leftovers into a delicious snack.

Here are Phil’s recipes for Kingsmill:

Beef and Stilton Roll with Watercress

Ingredients

• 1 Kingsmill Soft White Roll, cut in half

• 1 small slice of Stilton or similar blue cheese, crumbled

• 2 teaspoons of crème fraîche

• Juice of ¼ lemon

• 1 generous slice of cold rare to medium roast beef

• Small handful washed watercress

• Freshly cracked black pepper

Mixing the Stilton with crème fraîche and lemon juice lightens the cheese and gives the roll a zestful spark, balanced by the watercress.

The crispness of the lightly toasted/griddled roll balances the soft filling.

Method

Makes One Roll

• Lightly toast the roll under a moderate heat & cool slightly.

• Mash the Stilton with a fork and mix in with the crème fraîche and lemon juice.

• Use this to spread on the cut sides of both roll halves.

• Place the slice of beef on one roll slice and season with black pepper.

• Top with the Watercress and place the second half of toasted roll on top.

• Press down and eat.

Pigs in Blankets Under a Duvet

Ingredients

• 1 Kingsmill 50/50 Roll, cut in half

• 1 tablespoon of mayonnaise

• Few finely cut slices of cooked red onion

• 3 (or 4 depending on size) cooked cocktail sausages wrapped in bacon or pancetta (leftover from Christmas lunch)

• 2 teaspoons of cranberry sauce (homemade or shop bought)

• Juice of ¼ lemon

Pigs-in-blankets are traditional at Christmas – the red onion and cranberry sauce bring colour and sweetness to the roll, which is the duvet!

Method

• Lightly toast the roll under a moderate heat & cool slightly.

• Spread the mayonnaise onto both halves of the roll.

• Place the pigs in blankets on top of one half of the roll.

• Place the onion slices on top of the pigs in blanket.

• Loosen the cranberry sauce with the lemon juice and spoon this over the pigs in blankets.

• Put the other half slice of roll on top.

• Press down and eat. Yum!

Kingsmill also tried their hands out at making their very own festive role and here is the result!

Fig, Ricotta and Apple Rolls with Walnuts

Ingredients

• 2 Kingsmill Tasty Wholemeal Rolls, cut in half

• 4 tablespoons of ricotta cheese

• 2 small ripe fresh figs, sliced

• ½ green apple, sliced

• 6 walnuts, roughly chopped

Method

Makes 2 Rolls

• Lightly toast the rolls under a moderate heat and then cool slightly.

• Spread the ricotta evenly on the cut sides of the roll halves.

• Evenly place the figs and apples on top of 2 roll halves and top with the walnuts.

Put the other roll half on top, press down and eat!
