Mini Chocolate Puddings

These mini chocolate puddings are so easy to make.  You can also add your own flavourings such as orange zest or mint extract for a different twist.

Makes: 2 medium or 4 small

Preparation Time: 15 minutes

Cooking Time: 15 minutes 

Per Serving:

Fat  20g (of which saturates 8.8g)

Cals 293 

Carbs 21g Carbs (of which sugars 11g)

Ingredients

70g of 70% dark chocolate

100g low fat spread

Pinch of chilli flakes (use to your required heat preference) 

15g Canderel

3 eggs

50g/2oz plain flour

Method

1. Preheat the oven to 200C (400F) Gas 6.  Add the chocolate, low fat spread and chilli flakes to a heat proof bowl then sit it over a pan of barely simmering water, stir till melted then remove from the heat and leave to cool for about 10 mins.

2. Now add the sweetner and stir well so it all combines. Then add the eggs one at a time, stirring to incorporate each time then add the flour and stir again.

3. Pour the mixture into oven proof pudding basins, moulds or ramekins and put in the oven to bake for about 10-12 mins till the tops are firm but springy.

4. Don’t overcook them as you want the middle to remain gooey. Dust the top with sweetner and serve while hot with low fat crème fraiche.

Tip: Always use a chocolate with 70% plus cocoa solids
