Christmas is coming and everyone agrees that the best thing about the festive season is Christmas dinner. Research from Table Table has revealed that pigs in blankets are the nation’s favourite Christmas Day treat, beating traditional favourites like turkey, and it’s no surprise that brussel sprouts are bottom of the Christmas dinner wish list.

With pigs in blankets coming out on top, we know that it’s the trimmings that make a Christmas meal, but cooking delicious side dishes is easier said than done.

Table Table pub restaurants are experts at serving festive feasts, and the pub restaurant’s master of Christmas dining, Dave Rust, has put together some tips for sides with minimum stress.

· For the best pigs in blankets, lightly dust each chipolata sausage with a mix of ground nutmeg, cinnamon and ginger before wrapping in streaky bacon and grilling

· For the best brussel sprouts that still have a bite to them, cook from boiling salted water

· For delicious carrots toss them through a little bit of melted butter & caraway seeds

· Cook your roast potatoes in goose or duck fat to give a fuller flavour, most good supermarkets sell this in tins

· For extra crispy potatoes use a cast iron or thick solid tray, and ensure oil is hot before adding  potatoes

· Getting the timings right to ensure all the food is cooked at the same time can be a challenge. To make sure that all the food is fresh, hot and cooked to perfection, blanch your vegetables anytime beforehand and cool under cold water, then plunge into hot salted water 1 minute before serving.
