Apple & Blackberry Charlotte

With Autumn fast approaching, the nights are slowly drawing in and the air has taken on a subtle chill.  What better way to celebrate the seasonal change than to get cosy with some baked treats. Fresh from the oven, these delightful goodies will warm you from the inside, whilst indulging your taste buds at the same time!

Apple and Blackberry Charlotte

Serves 4

Ingredients

750g baking apples, peeled, cored and chopped

finely grated zest and juice of 1 orange

pinch of ground cinnamon

200g blackberries

4-5 tablespoons of sweetener

50g butter, melted

7 slices white bread, crusts removed

Method

Preheat the oven to 180°C/350°F/gas mark 4.

Put the apples into a saucepan with the orange zest, orange juice and cinnamon. Add 5 tablespoons of water, then simmer without a lid until the apples are tender – this will take about 10 minutes. Stir in the blackberries, then sweeten to taste with the sweetener.

Brush a 15cm straight-sided baking dish or cake tin with melted butter. Brush the rest of the butter over the slices of bread. Place one slice in the base of the dish or tin, reserve one for the top, then fit the rest of the slices around the sides, easing them into place and cutting them to fit so that there are no spaces.

Spoon the apple and blackberry mixture into the lined baking dish and place the remaining slice of bread on top, folding the bread around the sides over to enclose the filling. Bake for 30-35 minutes. Cool for a few minutes, then serve.
