The Open

Mission Deli Wraps have created some sporting inspired recipes which are the ideal dishes if you are On a Mission to Get Active this summer.

From golf inspired chicken and goats cheese open pizza style wrap, to the superfood Squash wrap and even gymnastic Salmon Cartwheel, Mission Deli have a great range of different dishes that are ideal for kid’s lunchboxes and lunch on the go, family meals and alfresco summer dinning (great British weather depending).

The Open

Serves 4

Prep time 5 mins

Cook time 20 mins

Ingredients

1 red pepper, deseeded and chopped

1 yellow pepper, deseeded and chopped

2 courgettes, halved and sliced

2 red onions, cut into wedges

1 tbsp olive oil

4 tbsp pesto

240 g cooked chicken, roughly shredded

100 g goats cheese, chopped

torn basil leaves to serve

Instructions

  • Preheat the oven to 220°C (425°F) Gas Mark 7.
  • Place the peppers, courgettes and onions in a roasting tin and sprinkle with the olive oil.  Roast for 20 minutes.
  • Heat the wraps and spread each one with 1 tbsp pesto.
  • Sprinkle over the roast vegetables and top with the chicken and goats cheese. 
  • Grill for 1 minute and serve sprinkled with torn basil leaves.

Squash

Serves 4

Prep time 5 mins

Cook time 20 mins

Ingredients

250 g butternut, peeled and cut into chunks

1 tbsp olive oil

200 g tomato salsa

75 g baby spinach leaves

2 red peppers, deseeded and sliced

125 g mozzarella, broken into chunks

2 tbsp pumpkin seeds, toasted

Instructions

  • Preheat the oven to 220°C (425°F) Gas Mark 7.
  • Place the butternut in a roasting tin and sprinkle with the olive oil.  Roast for 20 minutes, until tender.
  • Spread each wrap with the tomato salsa and top with the baby spinach leaves, red peppers and roast butternut.
  • Divide the mozzarella between the wraps, sprinkle with the toasted pumpkin seeds and wrap to serve.

The Cartwheel

Serves 4

Prep time: 5 mins

Ingredients

175 g cream cheese

60 g baby spinach leaves

275 g smoked salmon

freshly milled black pepper

Instructions

  • Spread each mini wrap with cream cheese.
  • Top with spinach leaves and then smoked salmon and then sprinkle with black pepper.

       Roll the wraps as tightly as possible, cut in half and wrap in napkins for the perfect snack on the move.
