Superfood Fruit Salad

South African grapefruits are available in UK supermarkets from May through to October. Look out for red, pink and yellow varieties, which are sweet and refreshing.

TV chef and author Sophie Michell has designed three recipes using South African grapefruit, which are ideal for enjoying alfresco during the summer season.

"Breakfast should be all about sunny, vibrant, vitamin packed goodness to wake you up the right way, no sugary cereals and greasy fry-ups! Grapefruit is full of vitamin C and potassium and has long been known for its fat burning qualities, so gets your metabolism going from the start.

"I have added the yoghurt and pistachios for the all-important protein, to keep you sustained throughout the morning."

Ingredients:

1 pink grapefruit
1 yellow grapefruit
150g blueberries
1tbsp pomegranate seeds
300ml low-fat Greek yoghurt
1tbsp runny honey
1 tbsp nibbed pistachios

Method:

1. To make this vitamin and antioxidant packed breakfast dish start off by preparing the grapefruit.

2. Slice off the top and bottom, then with a sharp knife cut closely down the side, discarding the skin/rind.

3. Then simply mix the segments with the blueberries and pomegranate seeds (this can be done the night before to save time in the morning).

4. Serve with the honey-drizzled yoghurt and a sprinkling of pistachios.
