Ricotta and Tomato Pancakes

Whoever said that pancakes could only be sweet obviously hasn’t tried these pancakes!

The creamy ricotta mixed with the peppery rocket and rich tomato sauce is heavenly.

Give them at go by following this simple recipe!

Serves: 4

Ingredients:

Pancakes -

250 g plain flour

4 eggs

500 ml milk

Pinch of Salt

40 g Bertolli Spread, melted, & extra for greasing and dotting   

Filling -

300 g ricotta

100 g rocket, finely chopped 

50 g parmesan cheese, freshly grated & extra for sprinkling

A little salt & pepper

Sauce -

2 tablespoons olive oil

1/2 onion, finely chopped

1 x 410 g can plum tomatoes, chopped

Handful of fresh basil, roughly chopped 

Some rocket to garnish  (optional)

Method:

Sift the flour and salt into a bowl, add the eggs and stir, gradually whisking in the milk, ensuring no lumps are formed, until you obtain a smooth runny batter, then stir in the melted Bertolli Spread.    

Place the frying pan on the heat, grease with a little Bertolli Spread, then add a ladleful of the mixture in the centre of the pan. Swirl the pan around so that the mixture runs to all sides. Fry until the bottom is golden and flip over to cook on the other side. Remove and set aside. Continue to do this until your mixture has finished - you should end up with 8 pancakes

Preheat the oven to 200 C,190 C fan oven, Gas mark 6. 

For the filling - Combine all the ingredients mixing well. Spread some of the filling onto each pancake, then fold each one in half and again in half ending up with a triangle. Gently grease an ovenproof dish with Bertolli Spread and place the pancake triangles inside slightly overlapping each other. Dot with Bertolli Spread and sprinkle with some parmesan. Bake in the oven for 10 minutes. 

Remove and top with about a spoonful of tomato sauce on each pancake.  Garnish with some rocket and serve.
