Mini Gram Flour Vegan Pancakes With Hummus

INGREDIENTS:

1 ¼ cups of gram flour    

½ tsp of cayenne pepper

2 tsp of chopped coriander

5 cloves of garlic cloves, minced

1tsp fresh or dried ginger

4 red peppers

3 tsp of olive oil

½ tsp of sea salt

1 small red onion, very finely chopped

METHOD:

  1. Put the chick pea flour in a large mixing bowl and add 1 cup water, stir to make a soft batter. Add the salt, pep-pers and cayenne pepper, onion, ginger, and coriander.
  2. Mix and leave for 15 minutes.
  3. Place  1/2  tbs  of  olive  oil  in  a  large  frying  pan,  over  medium heat.
  4. Stir once and place about 1/3 cup batter into centre of frying pan. Treat as if making a pancake.
  5. Cook for 3 minutes. Turnover and cook, for one minute; until   golden. Repeat   with remaining batter, stirring before using. You can buy the hummus or make it fresh.
