Poached pears with chocolate sauce and pistachios

For the poached pears:

25g caster sugar

1 cinnamon sick

300mls water

2 small pears, peeled

For the chocolate sauce:

40g vegan dark chocolate 

50mls light non-dairy milk

15g shelled pistachio nuts, roughly chopped

  1. Place the sugar, cinnamon stick and water in a small pan and gently heat to dissolve the sugar. Add the pears, cover and simmer, over a low heat for 20-30mins or until the pears are soft.
  2. To make the chocolate sauce, melt the chocolate in a small heatproof bowl over a pan of boiling water, once the chocolate has melted stir evaporated milk.
  3. Remove the pears from the sugar solution, slice in half and transfer to a serving dish, drizzle over the chocolate sauce and sprinkle over the pistachio nuts.

Per serving: 250cals, 10g fat, 4g saturated fat, 4g protein, 4.5g fibre, 36g carbohydrate, 36g sugar, 0.1g salt
