Strawberry & Coconut Chia Pudding

Strawberry & Coconut Chia Pudding

Ingredients:

550g Strawberries (fresh or frozen)

375ml coconut milk or almond milk.

2 tbsp. agave 

1 tsp vanilla essence

80g chia seeds

50g coconut chips

Method:

  1. Puree 500g of strawberries in a food processor or blender
  2. Mix milk, agave, vanilla essence, 250g pureed strawberries and chia seeds in bowl and set aside to gel for at least 20 minutes.
  3. With the remaining strawberries cut into quarters and set aside
  4. Once chia seed mixture has gelled and thickened create a layered effect with chia mixture and remaining strawberry puree in glass or bowl. Garnish with cut strawberries and coconut chips
