Sesame tossed aubergine and green beans

INGREDIENTS

5 aubergines

6 green beans Oil for frying

5 to 6 tbsp half-ground sesame seeds

1½ tbsp maple syrup

2 cm ginger

1½ to 2 tbsp soy sauce

COOKING TIME

4 minutes

METHOD

Break the string beans into 4 cm pieces and boil. Roughly chop the ginger. Combine the ingredients for A. Heat the oil. When the oil is hot, cut up the aubergine and fry immediately. Add the aubergine to the other ingredients and stir, then add the green beans and stir. When you fry aubergine, never use water. Heat the oil, then cut the aubergine. Then fry immediately. It is done in a matter of seconds. The sesame sauce is also extremely quick to prepare. All you need to do is add the maple syrup to the sesame seeds and then add soy sauce. Pour light maple syrup over the sesame seeds. This sesame sauce will also go quite well with other dishes.
