Smoked paprika beef goulash


500g lean braising steak, cubed

Calorie controlled cooking spray

2 onions, sliced

2 garlic cloves, crushed

1⁄2 tablespoon smoked paprika

400g tin chopped tomatoes

300ml beef stock made with 1⁄2 cube (ensure gluten free)

1 red pepper, deseeded and sliced

1 green pepper, deseeded and sliced

410g tin butter beans, drained and rinsed


1 Preheat the oven to 150 ÌŠC, fan 130 ÌŠC, gas mark 2.

2 Season the steak and mist a lidded ameproof casserole with the cooking spray. Brown the steak in 2 batches, transferring the meat to a plate after it is browned.

3 Mist the casserole with a little more cooking spray and cook the onions for 5 minutes. Stir in the garlic and smoked paprika and cook for 1 minute, then add the tomatoes, beef stock and browned beef. Season to taste, bring to a simmer, then cover and cook in the oven for 1 hour.

4 Stir the peppers and butter beans into the stew, pushing them down into the liquid, then replace the lid and cook for a further 30 minutes, or until the meat is tender.
