Mushrooms can make simple and tasty springtime meals.

The humble mushroom is one of springtime’s hidden treasures. Great for when you are in a hurry and they can be eaten at any time of the day.

SLIMMER’S MUSHROOM MEDLEY

Prep: 15 minutes

150g pkt baby button mushrooms

3 oranges

½lemon                                                                                                            

½cucumber, peeled, de-seeded and chopped

½galia melon, de-seeded and chopped

2 figs, each cut into 8 wedges

2 sprigs mint, chopped

 

1. Rinse and drain fruit and vegetables.

2. Put the whole mushrooms into a large bowl. Peel one orange, remove pith and cut out orange segments. Stir into mushrooms.

3. Grate remaining oranges and lemon and squeeze out juice. Add to mushrooms. Stir in prepared cucumber, melon, figs and mint.

4. Cover bowl with cling film and refrigerate for 2 hours.

 

This recipe keeps in the fridge for up to 3 days.
