Christmas Florentines

These traditional Christmas treats make a deliciously sweet and fruity accompaniment with a nice cup of tea for those cold winter afternoons. They also make beautiful gifts if you wrap them with sugar paper and Christmas ribbon.

Makes: 24

Ingredients:

·50g Country Life block butter

·50g golden caster sugar

·2 tsp runny honey

·50g plain flour

·50g candied peel

·50g dried cranberries

·30g lightly toasted flaked almonds

·100g plain chocolate, to coat

Method:

1. Preheat oven to 180°C, fan 160°C, 350°F, gas mark 4.  Line a baking tray with non-stick baking paper.

2. Put the butter, sugar and honey into a saucepan and heat gently until the sugar is dissolved. Remove from the heat and leave to cool.

3. Add the remaining ingredients into the cooled butter, folding to distribute the fruit and nuts evenly.

4. Spoon a tablespoon of the mix onto the baking trays, pressing lightly to flatten a bit. You may have to do this in two batches. Cook for 7- 8 minutes or when the biscuits have spread and are light golden in colour. Leave to cool for 5 minutes.

5. Break the chocolate into squares. Place in a small bowl and set the bowl over a pan of simmering water. When the chocolate is melted, remove form the heat and beat until glossy.  Dip one half of the Florentines into the chocolate and leave to cool.
