Roast Chicken with Gravy

We've got some proper 'comfort food' meal ideas for you here, from a delicious roast beef recipe, to turkey and chicken recipes. The meals have been created by Knorr, to celebrate the first ever British Roast Dinner Week and to release their barand new gravy pots.

Roast Chicken with Gravy

Preparation Time: 10 minutes
Cooking Time: 1 hr 30 minutes
Serves: 4

Ingredients:

  • 1.4-1.6kg (3-3.5 lb) chicken
  • 3 tablespoons of olive oil
  • 1 clove of garlic, crushed
  • 1 medium lemon, halved
  • 1 onion, haalved
  • 1 tablespoon of freshly chopped thyme
  • 1 Knorr Chicken Gravy Pot
  • Freshly ground black pepper to season
  • Zest of 1 lemon

Method:

  1. Pre-heat oven to 190°C/170°C fan oven/gas 5.
  2. Mix the olive oil, lemon zest, garlic and thyme together and brush over the chicken. Season well with freshly ground black pepper.
  3. Stuff the chicken with the onion and lemon and place on a roasting tin.
  4. Cook in the centre of the oven, allowing 20 minutes per 450g (1lb) plus an extra 20 minutes. Baste occasionally with the chicken juices.
  5. Once cooked, make the gravy by first pouring off the fat from the roasting juices. Add the Knorr Chicken Gravy Pot with 280ml of water (taken from boiling vegetables) to the roasting tin and place on the hob. Slowly bring to boil, stirring continuously, and boil for 1 minute.
  6. Serve with roast potatoes, your choice of seasonal vegetables and bread sauce.


Roast Beef with Gravy 

Preparation time: 20 minutes
Cooking time: 45 minutes
Serves: 6

Ingredients:

  • 1 ½ kg (3 ½ lb) rib of beef
  • 1 teaspoon of flour
  • 1 teaspoon of dry mustard
  • 1 ½ tablespoon of olive oil
  • 6 parsnips, peeled and halved
  • 6 carrots, peeled and cut into large chunks
  • 4 shallots, peeled and halved
  • 1 tablespoon of freshly chopped sage
  • 1 KNORR Gravy Pot Beef

Method:

  1. Preheat the oven to 210°C/190°C fan oven/Gas 7.
  2. Combine the flour, dry mustard and sage, and dust over the beef.
  3. Heat the olive oil in a thick based frying pan and add the beef, fat side down. Once the fat has rendered and turned golden brown, sear the beef on all sides.
  4. Place the beef in a roasting tin with the vegetables and drizzle over with the juices from the frying pan.
  5. Cook for 15 minutes in the oven, reducing to 190°C/170°C fan oven/gas 5 for 15 minutes per lb for rare beef. Baste occasionally with the beef juices.
  6. Once cooked, allow the beef to rest on a board or a large plate.
  7. For the gravy, spoon of the majority of the fat from the roasting tin before adding the Knorr Beef Gravy Pot and 280ml of warm water to the tin. Place on the hob, stir continuously with a whisk and bring up to a boil. Boil for one minute, until thickened.
  8. Serve with roast potatoes, seasonal vegetables and Yorkshire puddings.
