Italian Recipe: Spaghetti Pomodoro

Spaghetti Pomodoro

Serves: 4 - 6  

Preparation time: 15 minutes  

Cooking time: 20 minutes

Ingredients:

500g Italian Spaghetti

4 tablespoons of extra virgin olive oil

1 tin of chopped tomatoes

500g of tomato passata

10-12 vine-ripened tomatoes, roughly chopped

3 garlic cloves, finely chopped

4-5 fresh basil leaves, finely chopped

Salt and pepper to season

Garnish:

2 large balls of buffalo mozzarella

4 fresh basil leaves finely chopped

Method:

Firstly bring a large pan of water to boil, once boiled, add a pinch of salt and the spaghetti.

Cook the spaghetti for 10-12 minutes and drain once cooked.

Add chopped garlic to a tablespoon of oil and lightly fry in a large saucepan till the garlic starts to brown.

Then add in the chopped vine-ripened tomatoes, and cook for a few minutes on low heat until the tomatoes starts to soften.

Next to go in are the tinned tomatoes and passata , gently bring to the boil and simmer for 10 minutes.

Finally, stir in the chopped basil and season to taste.

Mix the cooked pasta and the sauce together well, and serve immediately in warm bowls.

Garnish each serving with buffalo mozzarella torn into pieces, chopped basil, and a drizzle of extra virgin olive oil.
