Spirited Chicken Noodles

Spirited Chicken Noodles

Ingredients

  • 200g chicken breast or thigh fillets, diced (use tofu for a vegetarian option)
  • 3 cloves of garlic, finely chopped
  • 3 bird's eye chillies, finely chopped
  • 5 or 6 spring onions, chopped into 3cm pieces
  • 3 tbsp oyster sauce
  • 2 tsp light soy sauce
  • 20-30 Thai basil leaves
  • ½ tsp sugar
  • 1 tbsp vegetable oil
  • 200g thick rice noodles
  • A good glug of New Amsterdam Vodka (50ml)

Method:

  1. Soak the noodles in hot water until soft
  2. Heat up the oil in a wok (or large frying pan) over a high heat
  3. When smoking hot, add the chicken and stir-fry until sealed on all sides
  4. Pour in the New Amsterdam Vodka and allow some of the alcohol to evaporate
  5. Throw in the garlic and chillies and keep stirring for another minute
  6. Add the oyster sauce, soy sauce and sugar, tossing to coat the chicken
  7. Add the soft noodles and stir through the sauce for 1-2 minutes to warm through
  8. Stir in the Thai basil and the spring onions
  9. Serve in warmed bowls with a few slices of red chilli on top.
