Forget all the other oils in your cupboard, it's time to put your coconut oil to good use in the outdoors this summer. Here we have 5 ways you can use it to give your vegan BBQ a tropical twist.

But first- make sure you pick a brand that's organic, raw, and cold pressed so you're getting the most bang for your buck.

Baste it

Use coconut oil to baste your veggies (such as courgettes, aubergines, and sweet potatoes) before throwing them on the BBQ. It will help them to cook evenly and stop them from sticking. It works really well in glazes and marinades too if you want to give your vegetables a bit of a spicy kick or a sweet and saucy flavour.

Relish it

Make a healthy alternative to shop bought relishes with onion, green peppers, pineapple chunks and seasoning with coconut oil over a medium heat for half an hour. Add lime zest, mustard and garlic and pop into a bowl. You can leave this until everyone's ready to eat and it will make a great side for your veggies and vegan meats.

Add a little extra

Every BBQ needs some sexy side dishes and nibbles. Use coconut oil as part of a gorgeous guacamole with the following instructions:

Guacamole ingredients

1 ripe avocado

½ lime, juiced

¼ cup red onion, diced thinly

½ clove garlic, mashed

¼ tsp coconut oil

½ tsp coriander, chopped

Rock salt and ground black pepper

Method

In a bowl, mash the avocado with a fork and add the lime juice, red onion, mashed garlic, coconut oil and coriander. Season to taste and cover with cling film to avoid the guacamole going brown.

Spread it

Use coconut oil instead of butter to pop on your toasted buns.

Dessert

If you like to finish off with something sweet, pop pineapple, mangoes and lime onto a skewer, brush them with coconut oil and toast them for a healthy hit that smells just like holidays.
