This recipe has been written specifically to help with mood and concentration, and contain ingredients that will help you enhance that great summer feeling!

This fibre-rich, full-flavoured dish makes an easy and popular vegetarian option. Serves 2

1 tsp olive oil
1 red onion, diced
1 x 410g can mixed pulses, drained and rinsed
2 tablespoons of a good quality tomato-based pasta sauce
4 marinated artichoke hearts from a jar or the deli (optional)
Handful of black olives, pitted and roughly chopped
Freshly ground black pepper, to taste
Handful of fresh basil leaves, torn

1 Heat the oil in a saucepan and gently fry the onion for 1 to 2 minutes, just to take the raw edge off.
2 Add the mixed pulses, tomato sauce, artichoke hearts (if using) and olives, and stir.
3 Season with black pepper, remove from the heat and add the basil leaves. Allow to sit for a while if possible to let the flavours develop.
