Phil Vickery knows how to cook up a storm

Phil Vickery will be leading the country this September, in a Yorkshire pudding cook-off.

They've become the essence of a great British Sunday lunch but just what else can you eat them with, it seems a shame to just save them for a Sunday.

National Yorkshire Pudding Week runs from 19-25 September, how will you be eating yours?

Phil says: "There's no doubt that Yorkshire puddings are enshrined in the minds of people all over Britain, and the rest of the world, as the traditional accompaniment to roast beef, but with the help of Aunt Bessie's and National Yorkshire Pudding Week I want to show their tasty versatility as the basis for mid-week meals all-year-round.

"They are simply delicious and their soft and crispy texture and golden colour lend themselves to starters, main courses and a host of gorgeous desserts. I'm looking forward to starting the Yorkshire pudding revolution."


You're leading the launch of Aunt Bessie's National Yorkshire  Pudding Week, what does this entail?

Yorkshire Puddings are the essence of a great British Sunday lunch and I want to share with YP lovers and others just how versatile this food favourite can be and that they can be a part of mid-week meals easily.

How important are family meals to you? How often do you think families should sit down together?

As often as possible- a family that eats together, stays together.

Other than a Sunday roast, when else can Yorkshire puddings be
used?

They are really versatile definitely not just for roasts. For National Yorkshire Pudding week I will be making a real variety from Mexican chilli to a yummy dessert of cinnamon spiced puds! (See below for the Yorkshire tortillas recipe)

What's your favourite meal to eat with a Yorkshire pudding?

It has to be with rare roast beef, crisp roast potatoes and a healthy dollop of horse radish sauce!

Do you cook a lot at home, or do you think 'I can't be bothered' what with doing it as a full-time job?

No, I cook a great deal at home and still really love it!

Have you always been interested in cooking?

Yes, ever since I was a young boy!

What's your favourite meal to cook?

It has to be a roast- I really enjoy cooking all different types of roasts.

What's the easiest meal that any person can cook, especially to  all those out there who don't think that they can?

It has to be with pasta- simple and so very easy!

What three essential items must be on any persons shopping list?

Tinned tomatoes, pasta and bacon.

What's your ultimate cooking tip?

Don’t drink alcohol before you sit down at the table.

What else have you got planned in the next couple of months?

Well I am travelling all over the world making films for This Morning- so watch this space!

Recipe for Yorkshire Tortillas

Ingredients

4 Aunt Bessie’s Large Yorkshire Puddings
125g Mild cheddar cheese, coarsely grated
3 large ripe red tomatoes, finely chopped
1 green chilli, finely chopped
1tbsp freshly chopped coriander, plus extra sprigs to garnish
A squeeze of ½ lime
Salt & pepper to taste
Soured cream, to serve

Method

Preheat the oven to 200c/400f/Gas mark 6.
Put the Yorkshires on a baking sheet in the oven for 4 minutes until crispy. Sprinkle with grated cheese and return to the oven to melt the cheese.
Meanwhile, put the tomatoes, chilli, and coriander in a bowl. Add the lime juice and season well. Toss everything together.
When the Yorkshires are cooked, remove from the oven and divide the mixture among them.
Serve with a small dollop of soured cream and a coriander sprig on top.
