Hello,

Caroline Oldham

So since last week we have had some very exciting news we won our first award for Biteappy! An award recognized in not only the UK but also in America and Europe. So I won the 'Most Influential Woman in Technology' award that is an Appsters award apart of Apps World so I am really thrilled and it is not only an amazing personal and business achievement but it is also great for the 'free from' world.

A great product I want to share with you who you might know from the Dragon's Den but I have been chatting with them for a long time and tested a lot of their products is the Raw Chocolate Company. I was so impressed with the product because it is free from so many things; it is vegan, dairy free, soy free and gluten free and so many options and flavours to choose from. One of my favourites is the 'Vanoffee Dark' rich dark chocolate with an everlasting after taste of vanilla and coconut that is just delicious. This bar contains raw lucuma, which is gluten free, and a source of antioxidants, fiber, carbohydrates, vitamins and minerals necessary for bodily functions and of benefit to the immune system.

This week I headed back up to London also and my best friend gave me the honour of making a birthday cake for her husbands 30th birthday! I went for my classic gluten free and dairy free Victoria Sponge cake. You can also make it vegan if you substitute the eggs for applesauce as per my top tip the other week. Vegan Victoria Sponge

Restaurant Hangout of the Week

This week I took a trip up to Reading and I decided to go to Nibsy's renowned for their range of gluten free sandwiches, cakes and pasta but it doesn't stop there everything is so well labeled with containing allergens making you feel so at ease when choosing. I especially loved the 'exclusively' gluten free sign outside! I was so happy that they had almond milk, so was able to enjoy a gingerbread latte that was delicious and this drink makes your feel so festive.

I was so excited to try the cakes and of course went straight for the gluten free and dairy free options I did not need persuading. I jumped straight in for the date, beetroot & chocolate cake, no gluten, no dairy and no added sugar! I always get really intrigued by vegetable inspired cakes and I wasn't disappointed. It was so soft and full of flavour, very chocolaty with a hint of beetroot and the dates keeping it lovely and sweet. I really enjoyed it

Top Tip of the Week

My top tip this week is if you can't tolerate butter you can actually use vegetable oil as a substitute to make in cakes. The oil is a great way of keeping cakes light and fluffy and is best used in cakes like carrot cake. Canola is one of the most common cooking oils and wins in the category of best all-around oil to use for baking a cake. It combines ease of use, wide availability and health benefits with a relatively low expense.

Next week I would have just come back from New York so keep an eye out for that column, as I will be giving my top tips there.
