Picnic Recipes: Dill and Parsley Potato Salad

This light and refreshing dish is perfect for taking on any picnics you might be going on, as well as making the perfect lunch accompaniment to take to work.

Dill and Parsley Potato Salad

Serves: 4


675g Small potatoes

1 tbsp Gourmet Garden Chives

1 tbsp Gourmet Garden Parsley

A handful fresh Dill

1 tbsp olive oil (or low fat mayonnaise)

1 Lemon

Pepper and Salt to taste


1. Steam boil the potatoes until just standard.

2. Remove the zest from the lemon and juice the lemon.

3. Combine lemon zest, lemon juice, oil and herbs to make a dressing.

4. Toss warm potatoes in dressing. Add salt and pepper to taste. Serve warm or refrigerate and serve cold.
